Abstract

Purpose

The purpose of this study is to investigate foodservice industry employees’ experiences and perceptions related to substance abuse prevention measures in the workplace.

Design/methodology/approach

A qualitative approach was used for this foundational study, and data collection occurred by conducting in-depth interviews with 30 foodservice employees.

Findings

Participants reported that, in their perceptions, substance abuse prevention measures were virtually non-existent at their places of employment. The few participants that were aware of such policies indicated that they had never seen the policy actually enforced.

Practical implications

The results of this exploratory study suggest that foodservice employees may not be receiving adequate messages about workplace substance abuse prevention policies nor are they developing an adequate awareness of such policies. Further, where such policies are in place, they may not being adequately enforced, implying negligent business practices. Failure to display a presence and communication of workplace substance abuse policies and prevention efforts for this potentially high-risk population is both organizationally and socially irresponsible. Suggestions for the implementation of such harm reduction strategies are also provided, as is a call for further research conducted in a quantifiable method to offer more generalizable results.

Originality/value

No previous study has investigated employee awareness of substance abuse policies and prevention measures or harm reduction strategies in the foodservice workplace. This study provides a step toward understanding foodservice employee substance abuse and prevention that was previously lacking in the literature.

Abstract

Purpose

This study aims to investigate the Chile–China diplomatic and economic relations in the light of the extension of the bilateral free trade agreement (FTA) and the Chile's accession to the Belt and Road Initiative (BRI) in 2019.

Design/methodology/approach

This study takes Chile as a case of study to identify the main upcoming challenges and opportunities for relations between China and Latin American and the Caribbean (LAC) countries. The study examines news and official data on trade, investment and foreign policy.

Findings

The findings are twofold. First, the increasing and diversification of exports from Chile to China. Second, the participation of Chinese companies in public tendering procedures, which is increasing Chinese foreign direct investment (FDI) in the country. The growing volume of trade does not make Chile's economy more dependent on copper exports, and Chinese investment may help solve the structural deficit in infrastructures of the Andean country.

Originality/value

This study presents an overview of Chile as a partner for China and evaluates the relationship's impact on the development of the former. Recently collected data on bilateral trade and investments are analyzed to contribute to the emerging literature on Chinese and Chile relations.

Abstract

Purpose

The aim of this article is to reveal the extent to which a disaster situation contributed to fostering leadership in the population affected in terms of gender.

Design/methodology/approach

For this article, four focus groups were conducted, all of them composed of people directly involved in the earthquake and tsunami in Chile on February 27, 2010, two of them made up of women and the other two of men.

Findings

The research revealed that male leadership during the response and recovery processes is linked to traditional gender roles although the continuity of this differed between the two phases. With respect to women, they were found to be very active in the response phase in terms of managing emergency aid, a task linked to their reproductive and care roles. Women's leadership also appears in the recovery phase, where the collective dimension of their actions stands out, defying to some extent these roles and highlighting their capacity to adapt to the challenges of the disaster.

Originality/value

Understanding the leadership that unfolds in the population affected by this disaster during the response and recovery phases has significant potential to inform and influence the development of risk reduction policies that are more effective, egalitarian and resilient.

Abstract

The purpose of this article is to determine the degree of physical violence received and inflicted over the past two years by a sample of women in prison in their relationships with their partners (N=/213). Over half of the women report having suffered some form of violence at the hands of their partners at some time in their lives. As for physical violence experienced over the past two years, one out of every four women has experienced violence at the hands of her partner. The women in this study rated the act of physical violence they had experienced in the past two years as severe, a term they also used to describe the degree of disturbance, anger and fear they felt after the violent incident. As for the violence the women inflicted on their partners, one out of every four women has inflicted violence on her partner (26.8%) although they rate the most aggressive event during these past two years as slight. After the event, over half the women felt severely disturbed as well as slightly angry and scared.

Abstract

Purpose

The waste generated in the process of obtaining orange juice (J) may be used as a natural source of bioactive compounds, thus contributing to the profitability and sustainability of the process. To offer orange J as a dried matter would contribute to the integral valorisation of the J waste and also may expand the field of application.

Design/methodology/approach

To find out whether the JW matrix protects the bioactive compounds, the study compares the behaviour of the extracts of the compounds against drying with that resulting from drying the JW for further extraction. Dehydration was carried out at 25 or 50 C and gum Arabic (GA) and bamboo fibre (BF) were used as stabilising biopolymers (Bp). Vitamin C (VC) (L-ascorbic and L-dehydroascorbic acids [AA and DHAA, respectively]) and hesperidin (HES) were analysed before and after the drying.

Findings

The results suggest that to dry the JW gives a higher yield of bioactive compounds, which are also more stable, than when the extract is dried. Furthermore, both the higher temperature and the presence of the Bp favour the extraction of both VC and HES. In this way, all the waste from the orange J-processing industries is converted into a high-value product to be used for cosmeceutical or nutraceutical purposes and also as an ingredient for human food.

Social implications

The utilisation of organic waste for use in human food, but also in other sectors, is part of the new economic model that aims to do away with the concept of waste as people know it, focussing on a new paradigm in which each resource is a nutrient for nature, industry or society.

Originality/value

Abstract

Purpose

The purpose of this paper was to develop a loaf bread enriched with naranjilla (lulo) fruit (shells, seeds and pulp) and determine the technical quality, sensory acceptability and bioavailability (by in vitro digestion) of antioxidant components.

Design/methodology/approach

Loaf bread was prepared by using a no-time bread-making process. The crumb moisture, specific volume, crust and crumb color, texture profile analysis, analysis of the crumbs' alveoli, sensory evaluation, in vitro simulation of gastrointestinal digestion and antioxidant capacity were determined. Data were analyzed with one-way ANOVA (α = 0.05).

Findings

The specific volume was reduced by 21% (4.62 cm3/g, p < 0.0001), and the hardness was increased by 70% (2.9 N, p < 0.0001). Enrichment of the bread with naranjilla fruit (NF) contributes a yellowish coloration to the bread, which was very well accepted by the consumers and could be considered a natural colorant alternative. Moreover, the sensory evaluation indicated that the analyzed attributes (appearance, color, odor, taste, firmness and overall quality) of the naranjilla bread presented scores higher than 6.5 of 9 points hedonic scale. Naranjilla in the bread formulation had good acceptability by consumers. Naranjilla-enriched bread had an increase in total phenolic (TP)compounds and total carotenoids. In the product without digestion, naranjilla bread increased 1.7 times for TP, 50 times for CT and 1.3 times for TEAC, compared to the control bread (p < 0.0001). The percentage of bioaccessibility for fresh bread without digestion was 39.2 and 53.9% for the control and naranjilla bread, respectively. The addition of NF contributes to a higher TP compounds content and favors its bioavailability.

Practical implications

For bread production, fruits that do not meet the quality standards to be consumed as a natural fruit can be used. In this way, these fruits can contribute as a potential use to reduce agro-industrial waste and as a natural colorant.

Originality/value

Naranjilla is a native fruit from the subtropical Andean regions, which has high ascorbic acid concentrations, making it a fruit rich in antioxidants. Naranjilla-enriched bread contributes with beneficial compounds for the consumer.

Abstract

This work presents a review of the state of the art of the present century on academic and scientific production in Latin America related to the concept of Social Innovation. The analysis is based on articles published in indexed journals, which makes it possible to understand the existing asymmetry between the conceptual and theoretical veins, of the case studies, as well as of good social innovation practices that have been published in recent years. These debates have in some cases transcended public policies, as well as business and social realities where social innovation is a mechanism and strategy for personal, social, and territorial development. Finally, a Latin American community of researchers and academics around social innovation must be consolidated, who choose to continue building theoretical-empirical bodies following the Latin American reality.

Abstract

Purpose

This study aims to contribute to the literature on board gender diversity by soliciting university students' views on several perceptions raised by academics concerning the suitability of women to serve on corporate boards. In particular, if the opinions of male students differ from those of female students, this showing any gender bias.

Design/methodology/approach

The study is part of a much more comprehensive investigation into board gender diversity. It adopts a questionnaire approach, with this paper focussing on twelve research statements. Two hundred and ninety-six university students completed the questionnaires at a public university in the Czech Republic during March–April 2023. A pilot questionnaire was conducted in February 2023, resulting in minor changes being made. The data is analysed using SPSS and MedCalc® statistical software.

Findings

Whilst, in some respects, it supports the literature in relation to the observations highlighted in the research statements concerning female traits/characteristics, there is unmistakable evidence of gender bias in the respondents' opinions regarding the qualities women can bring to corporate boards. Overall, this research shows a negative bias by male respondents towards the positive attributes females can bring to the boardroom. This bias may influence the selection of female directors in the future. This research suggests that the apparent discrimination against women is not just because they are female but from a perceived mismatch between inferred female characteristics and male stereotype leadership requirements. There is, however, no gender bias with respect to students' leadership aspirations.

Practical implications

The findings of this research should help with policy-making decisions concerning the selection of future corporate board directors and help break down any negative gender selection bias. The paper adds to the discussion and debate about ethical issues related to business and broader society concerning gender diversity in senior management roles. It also adds to the political debate on the issue of legislative gender initiatives.

Originality/value

The research respondents' perceptions may well influence the decision-making process for the selection of future corporate directors. Whilst these current perceptions may, and invariably will, change over time, it is important to identify them at an early stage in the respondents' careers. This research gives a better understanding of the perceived qualities that women bring to corporate boards from an inexperienced perspective.
